View AttachmentWhat’s the baja sauce? Here is what I go off of, but tweak it to my tastes (like adding cilantro). I also blackened the fish this time instead of frying. Add whatever toppings you like, etc. Fish Tacos Baja Style Cut your fish into bite size pieces or sticks Make the batter - mix dry ingredients first, stir in wet till almost smooth: 1 cup of all-purpose flour, 2 tablespoons cornstarch, a teaspoon of baking powder, 1/2 teaspoon salt, 1 egg, 1 cup beer (Pacifico, Corona, Dos Equis or your favorite mild American) Prepare the sauce - 1/2 cup plain crema ( Mexican sour cream), 1/2 cup mayonnaise, 1 lime (juiced), 1 whole jalapeno pepper, minced (clean seeds and membranes if you're a wimp), 1 teaspoon minced capers, 1/2 teaspoon dried oregano (Mexican if you have it), 1/2 teaspoon ground cumin, 1/2 teaspoon dried dill weed, 1 teaspoon ground cayenne pepper (use less if you want them milder.) Mix cream & mayo. Add lime juice but not so much it gets runny. Add seasonings, mix well. Refrigerate. Shred a half head of cabbage (I like it shredded fine, almost like taco bell lettuce) Now heat a pan of oil to 375 Dust fish in flour, shake off excess, then roll in batter and fry a few minutes, not too long but crispy and golden! Drain on a rack over paper. Fry 10-12 corn tortillas for 10 - 15 seconds to heat through, don't get them crispy. Serve tortilla, a few pieces of fish, some cabbage, and the sauce, fold and eat. I have to serve with guacamole and salsa

Y’all made me hungry and I had a piece of fish leftover from the tacos last night so made a mixed green salad with hearts of palm, radish, red onion, cuke and avacado and put my fish on it. Was a good lunch on the lighter side. Attachment Deleted

Still catching shrimp off the dock in eel traps....8+ pounds out there this morning. Neighbors son went with Louann out to check the traps. Peeled a few, rolled them in a little olive oil and then added a little Panko Breadcrumbs. First batch was a "test"......on the 4th batch now!!!! And yes.......going out in a few minutes to put more bait in the traps!!!!

One of the best meals I ever had was after shrimping at Mandarin Point until 2 AM one night. My buddy pulled a couple of his crab traps on the way in. It was almost 4 AM by the time we washed everything and got a boil going. Drinking beers eating fresh shrimp and blue crab at 4 AM. Doesnt get much better.

I cooked a # of bacon, 3 chicken breasts and boiled 10 eggs. Made a hybrid chicken/egg salad. I’m going to go at it with some crackers and a tall boy on the couch.

You have a 5yo that eats broccoli? Good for you. I remember my kids eating everything till about 4yo then it was a struggle to get them to eat healthy stuff. My youngest grandson just turned 4 and wants nothing but hotdogs and pasta.

Ohh yeah he recently found out about the 'sausage dogs', as we call them. His preferred breakfast is a sausage dog with an over easy egg to dip it in.

Country Ribs. Smoked for three hours with some apple chunks, then threw in pan with apple juice to cook on grill for another 1-1/2 hours or so, then sauced and cooked for another 20 minutes or so. They were okay, but to be honest, we prefer to braise them with bbq sauce, for the full cook, until they shred.
