Smoked a rack of pork loin ribs, made deviled eggs, and we split an avocado. As usual, split the rack, used the same dry rub on both sections, foiled the wife's half rack along with apple juice, for about an hour, and then sauced hers with her favorite sauce. Ate mine with just the dry rub. Pretty decent taste, maybe just a bit too much salt, as I thought the last cook needed a bit more, and maybe I overcompensated.

Made a Mornay sauce and used it to make Mac and cheese with ham chunks. This is looking brutally good!! Sad thing is ( for me ) that as I've gotten old if I enjoy something like that......with hot sauce and a Pabst........by about 1AM I am miserable. Enjoy life while you are young!! And know that you've cause a bit of envy.....................

Had to google Mornay sauce after seeing that. That tray wouldn’t last a day in my house. Looks great.

The picture just doesn't do this one full justice. Fresh dough ball, into a cast iron with around 3 tbls of olive oil. I let it set up for about 30-45 minutes before saucing, filling, and topping with a fresh mozzarella ball. Oven had a coil burn out during the week so I put it on the gas weber at 450. Came out fantastic. Attachment Deleted

Bacon and eggs on the grill. Wasn't quick enough to photograph the eggs before they slipped through, but I'll be ready next time! Ended up grilling some burgers to go with the bacon.

Since they are closing down grouper we went out and got our limit off Homosassa. Never went deeper than 8’ 😁Tonight was grouper piquant, rice pilaf and a salad. This is the leftover but you get the idea. Tomorrow will be fish tacos and then Tuesday will be fried fish and cheeks most likely. Will try to remember to take pics. Attachment Deleted

I used shrimp, King crab, scallops, cold water lobster tails and halibut. This is the recipe except I went light on the heavy cream, used a little worcheister sauce, chopped garlic and heavier on the lemon juice. I also crumbled townhouse crackers on top. I have to say it was really tasty. www.askchefdennis.com/baked-seafood-casserole/
