Leftovers...because some things just taste better the next day and I typically cook more food than I can eat. It’s amazing what some sautéed chopped onions, garlic, jalapenos and cilantro with the right spices do to a couple cans of black beans. Tomorrow I will put the beans and rice on a fluor tortilla. Add some chopped onions and jalapenos with a little Pico and maybe a small dab of sour cream. Attachment Deleted

Cooler, Deboned cuts, Open drain and well iced for 2 or 3 days( 2 is plenty for a pig). Deer go 5 or 6 the same way, better yet just gutted in a walk-in.

I'll take those flounder. Is that last one a baby jewfish? It is......all of them inside the inlet. And, while I am not 100% sure about this, but....look hard at the mangroves....one is probably something else....a dog or mahogany or.....well, not sure. But in person it was obviously different.

I’m still dressing up the last of this most recent hog. The rest got legg’s #10ed last night. A couple pieces of strap w/ mushroom gravy and rice are in the works. Good stuff…..Kitchens clean and I’m grabbing a bowl. I’ll sleep good tonight. Attachment Deleted

Ok, this is long. It's carnival weekend, so it's pretty much 24/7 for 4 days or so. We stayed on the island, the city is way to crazy.
So yesterday afternoon the locals and I run the traps, collect probably 50 lobster, 15 lbs of stone crab claws, and 20 dozen blue crabs. We hand lined around 30lbs of snapper.
Back on dry land, set up the big pot to boil water, and kill off the first 1.75 of rum cleaning all the fish. Blue crabs go first, then the girls clean those. Stone crabs go second, gotta time them right. Lobster tails third. Then snapper filets which take seconds.
We've got a bunch of people to feed. I convince these guys the way to go is fish cakes, or fish balls. Big piece of plywood everyone chopping and dicing fish and shellfish, red onions, jalepeno. Girls fetch us a bunch of seasoning, eggs, some mayo, and panko bread crumbs. I think we mixed with Italian bread crumbs.
We swap out pots and get the oil going with a shallow basket. Second 1.75 of rum down. girls prepped up mustard sauce, butter with lime and habanero sauce.
We made these balls of lobster, crab, and snapper. Deep fried for maybe 1-2 minutes.
We killed at least two more jugs of rum. Skinny dipped until close to sunlight this morning. I'm having some rum right now to chase the cobwebs.
I would normally never fry a lobster or a stone crab. But I'm telling you they would charge a small fortune for these in any high dollar restaurant.

We called them crawfish bollos. Believe it or not bonefish and even ladyfish make great fish cakes just got a scrape the meat with a spoon .

Made cast iron chicken thigh fajita tacos topped with a sriracha mayo and roasted garlic aioli accompanied by a tomato corn salsa. Was really good. Probably the moistest chicken I've ever had. Attachment Deleted

Grand opening of a Chinese restaurant across the street . I enter the video at the 2:00 mark walking up ( white t-shirt, open shirt ) in center behind yellow dragon . I was walking over to get a take-out meal. Costs was 11.00 and I was paying 20.00 for their delivery with delivery fee and tip. Takes me 3 settings to eat the whole meal.
