Palomilla steak, black beans and rice with maduros and a slice of alligator pear. I had to look that up conchy. I was relieved when Palomilla didn’t translate to “pellet gun rat”.

Give me the basics on the palomilla, sounds good. I don’t need a portioned recipe. I cook flexibly

Give me the basics on the palomilla, sounds good. I don’t need a portioned recipe. I cook flexibly Palomilla is basically top sirloin cut 1/4" thick. EZ PZ, About 2-3 hours before cooking, squeeze some sour orange or lime juice on it and some minced garlic or even garlic powder, salt and pepper and let it sit. Slice some onions and cook them in a mix of butter and oil until soft and set aside. In same pan using the onion oil sautee the steaks to your likeness and add the onions back in with meat to reheat. One of the first things I learned to cook as a pre-teen kid.

I had some diced onions left over from making Thanksgiving dressing and made some diced potatoes. Fried them up with a couple eggs . Haven't had that in a while. It was good.

That's the way I eat it too. I melt some sharp cheddar in mine. Makes it real good.

Made Max's oyster stew last night. It was good. Will you share the recipe? I have nothing written down as Max shared it with me one afternoon sitting on the dock. Pint Heavy Whipping Cream Pint Whole Milk Stick of Butter(not margarine) Table spoon or 2 of Worcestershire sauce (more or less to your liking) Salt (amount depends on saltiness of oysters) Black Pepper Dash of Red Pepper Flakes Hot Sauce (I use Tiger Sauce)(amount again according to taste) 30 or so fresh shucked oysters. Put oysters and liquor in frying pan and sautee with a dap of butter till edges start to curl Put everything into 2qt or larger pan and simmer for a hour or more. Stirring occasionally. Do not let boil. Taste and adjust Worcestershire and spices to your liking. I have added a little soy sauce before when I was out of worcestershire and it was good. And of course serve with saltines

I had a rather interesting dinner last night. Had a couple of leftover filet mignons and cut them down to make fajitas Tasted fine when i ate them BUT about 15 minutes later i realized I'd made a big mistake The problem was i miscalculated how long they had been in the fridge and threw up for what seemed like forever. Thankfully my wife didn't want any and ate a pot pie Stomach is still not right this morning

Wife requested picadillo as we hadn't had it in a few weeks. This batch had a bit more tomato paste than normal, as I couldn't find the can of tomato sauce, that the wife swears was right in front of me in the pantry. Had it on top of Basmati rice and a little French bread.
