For what it's worth... believe I've read in several places that years and years ago (long before air conditioning finally made Florida attractive...) that sailcats were on the menu in restaurants (in places that had restaurants....). Would like to learn more... Of course, like most, don't think I'd like to be seen dressing one out at the cutting table...

I cannot attest to sailcats being on any restaurant but I have dined in restaurants where fresh water catfish were the mainstay of the establishment’s draw. Of course these eateries were all in central Florida and further north in the Deep South. So this begs the question why is their so much negative bias against a catfish that is caught in saltwater I would venture that it’s the reputation of the h saltwater hard head catfish. The hard head is actually eatable but I don’t like their taste and they don’t compare favorable to the sailcats on the table. Sailcats have a sweet white meat but I would agree they are not pleasing to touch or clean due to their slime. On the plus side they will hit an artificial lure like a game fish. I have had large sailcats nail a top water plug that I was tossing for a sea trout, of course I was disappointed that it was not a gator trout or a snook but they fight harder then either of those game fish on a poutnd for pound comparsion.
