I’m just not sure cooking in hot tar would be very healthy… Very interesting.

I've got 2 frozen butts I think I'll thaw and smoke this weekend. Take them up to the cabin for next week.
Bryan's Butt Rub with extra garlic powder, black cracked pepper, pink salt and smoked paprika. Inject them with a mixture of apple cider vinegar and apple juice.
They are about 7 lbs each, bone in. Hickory chunks.
210F or so till about 200F internally. Probably 12 hours or so.

I dunno. Half vinegar, half apple juice. If I have a sweet white wine open I'll include that. Just go over the butt injecting at different levels, probably a couple or 3 inches apart. You can include gariic powder in the injection, onion powder. |
