I prefer mine more ripened/black vs bitter/greener. Much sweeter IMO but I will eat them regardless.
My wife and step son prefer them more on the green/yellow side. Typically I hide a couple when they get to the house or I miss out on them cause they eat them before they ripen the way I like them.

The only time I want a really ripe banana is in banana bread. Otherwise, on the yellow side, just not too firm.

I like them fully yellow but not quite getting black spots. They split easily into thirds lengthwise and I like to split them so with my teeth. Takes a bit more time and enhances enjoyment.
If I get some that are fully ripe, I have no problem with putting them in fridge to slow further ripening. I prefer them chilled now.
