Just wondering how feral hogs taste as compared to domestic hogs? Flavor wise? Meat texture? Fat content?

Personally I like farm raised pigs better but there is a certain something about eating wild pigs that make you enjoy them. Maybe it is the primative hunter instinct that we all have in our DNA.

I usually just have them ground up into ground pork. They taste based on their diet, but up here they are not gamey. Makes good sausage or meat loaf. To me, they aren't worth the bother to try and get cuts from them.

I was asked to help thin out some feral hogs. Hate to kill anything that isn’t going to be eaten. I have never tasted feral hog and was wondering what they taste like compared to domestic pigs. I love ham. Is the ham comparable or is the feral hog simply sausage meat? BBQ ribs any good from a feral hog. And yes I realize that the meat will vary in taste depending upon what they have been feeding on. Thanks for the help. Ken

But.....if you go at it with the same attitude you had the first time you had venison or pheasant or even a oyster or a scallop......as something NEW, something to be taken on it's own merits and not held against something it is not then you'll find it quite good. It's closer to venison in color than to farmed pork that is full of fat, and of course has less fat......and the fat that is there, even in a bar, is different. The ribs are small, but, when slathered and slow cooked in a roaster they'll fall off the bones and be excellent. Most of the rest is best treated more like venison than fatty farmed pork, the frying of strips and straps being as good a fried meat as comes along. Keep that idea of it being something you've not had before and that needs to be judged on it's own merits rather than against something else..... And....if you end up with a small one....20-30 pounds.....consider skinning and cooking slow and whole......you will not be disappointed.....

This subject often has differing views. Everyone of us that’s been at it awhile has a variety of experiences. Most of the feral pigs I’ve been involved with were trapped and fed out (corn - 30 days) before being personally processed by us. Excellent table fare. Hunting we’d never shoot a boar on purpose unless the land owner greatly encouraged us to. We let the boars lay for nature’s cleanup detail. If it doesn’t affect my deer hunt and I can take one that’s dining on acorns and is a guilt, I’ll give it a try. Brother-in-law farmed hogs up north many years ago. A pen fed hog is marketed for a specific size to get hams, bacon, ribs you see in the store. As conchy said above, getting a good one you can eat on a hunt is satisfying. I don’t specifically target wild pigs and pass a ton of them up every season.

Pressure cook a wild pig, them pour off the yellow sauce and add bbq sauce. Nice tender bbq!
