Ferris, you definitely won the Irish Sweepstakes last night. That is impressive. My ex mother-in-law, who was Scottish made mashed potatoes with green onions in them, and I always took a liking to them. Anyway, I had just plain boiled corn beef and cabbage with red potatoes, carrots, and rutabaga. BTW, did you corn your own beef and smoke it too or you smoked a store-bought one? Did it take as long as a regular uncured brisket? Smoked a store bought one for a few hours and finished it in the oven. Used to make corned beef when the ol man was alive. We kept a 20 gal crock in a walk in cooler at his favorite beer joint. As I recollect, we used Durkees Pickling Spice, kosher salt and, seems like he added a little sugar. We'd stack 6 or 7 flats (never did tips) in the crock, pour the liquid over it, add water till the meat was covered. He had a big rock he'd put on top to keep them from floating. I hated when we were making it. I'd have to go by every couple days and get the flats out of the brine, put the top one on the bottom and reverse the order of stacking. That brine was cold and greasy and you'd have to get your arms into it up above your elbows. On the other hand, I was 16 or 17, by myself in a walkin cooler, with a hundred or so cases of beer. Had to wear a coat in there so you wouldn't freeze. My coat had huge pockets.

Grilled chicken marinated in jerk marinade. Grilled veggies (squash, potatoes, bell pepper, celery, broccoli, asparagus, carrots, onion, mushrooms ect), garden pea salad and a big slice of tomato.

Fried thick cut pork chop, collard greens with ham hock, corn bread. Dessert was another piece of corn bread with sliced strawberries on top.

Indian tonight. Spicy butter chicken (left) for the wife and chicken vindaloo (right) for me. Basmati rice, garlic naan, and vegetable samosa to go with the entrees.

We did our bag of seafood thing last night. Tonight I'm making BBQ beef ribs, pork ribs and chicken with greens, blackeyed peas and squash casserole.

Got in late from HH so stopped by the WH. I had blackened grouper and some slaw, couple of Titos n tonic. She had a blackened shrimp salad and a mango High noon.
