The pineapple upside-down......made me think of mom.........and caused a bit of envy........ Made me think of my mom too. I'm not a big cake eater but that was one of my favorites. I always liked custard type deserts. Key Lime Pie, coconut pie, and peach custard and flan were some of my favorites growing up. We salso used to make coconut icecream with jelly coconuts along with soursop and sugar apple icecream. I sure miss my childhood when the kids took turns cranking the icecream bucket.

Spanish from the other day........... Yessir! Yesterday’s fish. post was supposed to ask how everyone else cooks em. I did oil on foil, garlic salt and italian dressing, on grill til cooked.

Threw a long tray of thighs on the egg for dinner. Slightly overdone, but wifey likes crisp skin. Crispy skin is the way to go. It is hard to overcook a chicken thigh. They are very forgiving on the grill and taste great. Those look fantastic.

Strips were on sale at Publix, so I grabbed a few out of convenience. I usually buy meat at a local market that is much cheaper…

Threw a long tray of thighs on the egg for dinner. Slightly overdone, but wifey likes crisp skin. Pro chicken cooking tip: For crispy skin make sure the skin is thoroughly dried off before cooking. Moisture inhibits the crisping process. Looks great!

Taking a couple days off and took the wife to our favorite seafood restaurant in Sarasota which is Captain Brians. Doesn't have water views, in fact it is by the SRQ airport, but wonderful food. The wife always gets the fried oysters, today i had a blackened grouper sandwich. We split an appetizer of fried green tomatoes, which were very good.
