Had jungle steak with fried rice from the local Thai place last night. For my three day weekend. Bag of seafood tonight. Liver and onions tomorrow with a spinach salad. Saturday will be Arroz con pollo. Sunday is leftovers. What’s a jungle steak? New one to me. Is it a black bull and white cow’s offspring’s steak?

Its your typical marinated sliced Asian beef with onions...red Chile peppers ...green onions and cabbage. I like it for the cabbage. I get extra cabbage and you pick your heat level. I usually go extra hot with that.

A big extra cheese covered Shepherds pie with bread and butter.(massive amounts of butter 🙂) I’m wiped out from several days of enchiladas and salads, I needed something to stick to my ribs.

Chef Ramsey frozen Lasagna , English muffins made into Garlic bread and a sliced Avocado with blue cheese dressing on the side.2 beers and 2 shots of Early Times and a bowl of some kick ass local grown... Keepin it real down on the Dirt road.

A few of the shrimp out of the traps from the morning and a couple of pigfish that we caught in St. Augustine Inlet on others of the shrimp from the traps. Yes....simmered the pigfish in the shrimp water.....yes...excellent! And over the next couple of three days.....ceviche made from mangrove and lane and sand perch.....and some seared pigfish one night.....and that flounder.....robably get the grill.....though....I can stand cevichi 3-4 nights in a row..... As to the ribbon fish......sliced and fried...... And.....the scraps, along with some pinfish we kept, will bait the shrimp traps and the crab traps. Do you know how expensive meat is!

Conch peas, squash & onions from the freezer, baked sweet potatoes and cornbread. Our healthy vegetable night. Butter on the potatoes and the hot cornbread though.

Tonight is raw oysters on the half shell...peel and eat shrimp....cocktail crab fingers and heart of palm salad. Tomorrow I'm making a standing rib roast.. au gratin potatoes...rosemary garlic carrots...garlic green beans and a wedge salad.

So how was the hot honey ham? I’ve been meaning to try it but haven’t got around to it yet. Not spicy at all but a good ham sub. I bought some of the hot honey ham a while back and it has a slight heat, but barely noticeable. In a sub, you don't taste any heat.

Picked up a couple jalapeño cheddar sausages and a couple of bratwurst from the local butcher. Grilled them and sautéed up a sweet onion to go with them, with a side of canned green beans.
