Ok bro, gimme the basics for the gravy/other in the crockpot. I’m sold. The gravy is chopped green pepper, onion, celery, garlic, chicken broth, spices, bay leaves, fresh thyme and a heavy splash or two of Worcestershire sauce. I simmer the veggies in in a pan to soften. I like them really soft because after 8 hours in the crock pot the only thing left is the flavor. I brown the seasoned and flour dredged necks in butter and olive oil. Pull the necks and then make a roux or gravy with with what's in the pan adding more butter, fluor, broth and the Worcestershire making a thick gravy. The crock pot is already warmed up with chicken stock or broth so I add the veggies and gravy and whisk until smooth. Then in with the necks, fresh thyme and bay leaves for an 8 hour slow cook . The flavor of the necks and gravy is outstanding.

Cad, what's your local go to Mexican joint in the area? Roma, Tankerd ? I like Peppers on Newberry Road or Blue Agave on 43rd Street and both are close to me. Peppers is better. Las Margaritas is close and used to be good, but the last couple of time I have been disappointed in the food there. La Tienda on SW 13th is good as is La Pasadita on NW 6th Street, but I rarely want to drive across town for Mexican food. Most Mexican places, like most chinese takeout, are about the same.

WalMart burger fried..WalMart Baked beans Microwaved..Red Robin Fries from WalMart Deep fried.. I got stuff to do... I think that's the 4 major food groups...but as always....check with cadmus

La Tienda and La Pasadita here, I avoid the west side at all costs. La Tienda is our favorite. I rotate between enchiladas (verde and rojo) and carnitas burrito. Good stuff! Parking sucks, if you go for lunch get there by 11:30.

Picadillo this evening in order to use up some ground beef, plus I made chicken salad for lunch, for the two of us, and didn't want grilled chicken for dinner. We didn't plan this out, and didn't have any small cans of tomato sauce or paste, so I ended up using a can of Rotel. Gave a little heat to this batch that was a nice touch. Wife had her's with rice, I didn't have the rice, but threw in some steamed cauliflower into my bowl and it absorbed the flavor of the picadillo.

Get some coconut vinegar (spicy), I prefer that over too many olives.

Looks like crap..Vomit in a Pot. Me , I'm busting out the All Beef Plump When You Cook them Ball Parks. Can of hot dog Chile and cheddar cheese sprinkled on top and the deep fryer is fixin to do breaded Okra... I love that stuff

We had sliced rare ribeye, gouda, pickled red onion w/ fried egg… grilled sandwiches. Side of roasted Brussel sprouts w/parm and balsamic.

Just gathered everything to make empanadas tonight w/ a salad. Been pondering the seasoning I want. Going with chipotle, fresh red chilies, onion and a little mexican quesadilla cheese. May add some black beans.

I'm with Ferris... gimme a thigh or wing. I mean, chicken breast can be good, but it takes a little talent to get 'em right.
The health benefits are negligible compared to dark meat but the cooking is not.
