Gonna make up a big batch from red and red snapper both smoked with skin on. We have a big dinner after church tomorrow, we will see how popular it is. Don't have any kings or spanish, so using what I have. The redfish is only a week old.
I take a few pics after it's done.

I use mackerel, Kingfish or AJ. Dry brine with salt and brown sugar overnight, then lightly rinse and set on grills to dry while the smoker heats. Sprinkle with cajun seasoning and smoke at 225 for 3 hours.
I grind it in food processor until fine, like sawdust. Add mayo, sour cream, cream cheese, sweet pickle relish, worcestershire and hot sauce.
It's won prizes

I have heard smoked sailfish dip is awesome. Probably more about the recipe than anything though. Mullet does fine for me also.

I like to chop some up fine and then take a few fillet's and chunk them. That way you have two different textures, and every cracker gets a piece or two of just smoked fish. Damn. Now I'm hungry.

I have heard smoked sailfish dip is awesome. Probably more about the recipe than anything though. Mullet does fine for me also. Sailfish is one of my favorites for dip. You have to listen to the "never kill a billfish" bunch (except swords, you can kill as many as you want there.) crying like little babies, and telling you you're not a sportsman though.

Bass and eggs is a fine breakfast when camping. I’ve heard it all. I’ve had plenty of grilled sword and marlin steaks. I may have had sailfish too, just not smoked.
