Got a small 5# batch in the smoker. LEM jalapeño/cure. Added 4 oz of cabot habanero cheese and 8 oz of sharp white cheddar. Getting a light cherry smoke trying to hold 175ish. We will see. I eluded to the high temp cheese creeping me out before. Something about cheese that won’t melt🤢. I’ll report back

4 hours in, IT is 150. Stoked it up to 195ish.

That’s all it took, which is why you have to pay attention. 163 degrees IT @4 1/2 hours And into an ice bath. Pics and taste test later.
