When I do make tartar, which is rare, I use mayo, sweet relish, a bit of horseradish, dill and a splash of malt vinegar.

Made this to eat with some fish tonight. Had a bite to see how it tasted and it is pretty darn good. Used sweet relish as the pickles

I make it different everytime.
Always... Mayo, mustard, vinegar, lemon juice, salt
Things I may or may not add... Chopped pickles, pepper rings, pepperocini, different mustards, capers, dill, Giardiniera, chopped onions, parsley, garlic, worschester, cooked egg yolk, spices(pepper paprika, fennel, or cumin, etc).
I love MSG but it fucks up tartar sauce. It deadens the tang of the lemon/vinegar.
Most important thing about tartar sauce is letting it sit in the fridge. 4 hours to overnight. 2 hours will work but its still tastes "just made" until about 4hours.
I usually do mayo mustard lemon juice vinegar and chopped pickles and capers, salt at the end if needed..
