I love em. Snails that is. If they are on the menu I’ll order some. They are usually only at fine dining establishments which I don’t do very often though.

Apple snails are yummy. Let them live in clean water for several days. Clean them and sauté in garlic butter. Years ago before the Web I wrote to the food editor of the Naples Daily News and asked about eating them . I lived around miles of Canals at the edge of the Glades. She wrote about it in her collume the next week and said ..No Way ! She never said why and I should have went and ate some anyways. City girl most likely...

Y'all make sure to purge those nasty things for a couple days and make damn sure you cook them thoroughly if you insist on eating them. They carry some bad parasites and I think the eggs of the apple snail are toxic.
I have eaten them in restaurants enough to know they're nothing special for my pallette. Pass me the chicken wings.

Only one is native. I’ve only had the native ones. I cannot say if the introduced ones taste any different. Truly, they are delicious. First time I had it, a buddy of mine harvested some on a whim and he cooked them with spaghetti. He soaked them in clean water at least for several days. It could have been a week or two. I can’t remember. But they were good and clean tasting. Milder than other mollusks I’ve tried. Recently had some good escargot in a quality Italian restaurant, species unknown. I’d say the apple snail is better in terms of being cleaner, milder, and more tender.

I mentioned Purging them for a few days. Just like fatting a Hog up on sweet corn to me. She was dead set against it. Now I don't know the type of snail for sure but the Glades were full of them and the Everglades Snail Kite seemed to have no problems. Bet the Seminoles never wrote the Food Editor...

50 years ago I had them out of curiosity at La Chaumiere, a fancy French restaurant in L.A. Yuck - slimy, gummy, nasty things - like congealed snot...once was more than enuf.

I've had both the French escargot with garlic butter and the Philippine version in coconut milk which uses Philippine Apple Snails from the rice paddys. I liked them both. The only food item in my life that I don't care for is ampalaya or bitter melon. Different strokes for different folks.

Escargot is ok. Not real good, not bad either.
As someone said above, garlic and butter makes everything better.
