Made chicken and rice last night and roasted some asparagus. Leftovers tonight.
Headed to cyclists in a bit to get the engine hoist.

I made a small low country boil last night. I also made clams and mussels in a garlic white wine sauce. We had a couple dozen raw oysters for an appetizer. I’m making angel hair pasta tonight and a clam sauce with the leftover clams.

Wife is sick so I popped in a frozen TV dinner. Sucked but filled the gullet. Gonna make things right with a slice of Edwards key lime pie.

Looks like work coming up 4ward. Yes, we got some sausage to grind. Made schnitzel, twice baked taters and steamed cauliflower tonight. Boys got a call Friday night to come get a pig. Middle of town Gainesville. Turned out to be a 325#+ BAR. Obviously pen raised ( no dirt, no ticks, no stank) They didn’t ask any questions. Someone else had already put a .22 round thru his snout before the canned .223 to the neck by the property owner. Me and my freezer are good with not knowing the full details 😉

Cadman, yes, that is close to what I do. I do not like the raisins in mine so I leave them out. I think you have to have at least two tablespoons of cilantro, and in yesterdays batch, I only used a small can of tomato sauce, but I usually use a couple heaping tablespoons of paste in mine. Be sure to use some of the brine from the olives, as we love the taste.

Had some asparagus in the fridge that I intended on cooking with steaks last Thursday. First time cooking them in the air fryer. They came out very tasty. Pan fried a couple well seasoned thin cut chops with some yellow rice.
