What local vegetables does Belize grow? What can you buy "fresh"? The Mennonites grow what we get....potatoes, tomatoes, onions, all varieties of hot and sweet peppers, root vegetables like carrots and jicama, yuca, cilantro, lettuce, cabbage, I'm forgetting some but those are what I can think of They also provide squash, zucchini, spinach, corn, leeks, a few herbs like basil and oregano.....still thinking.....damn its early and I didn't fish today......way too much rum last night Avocados....how can I forget those!!!

I won't eat gas station food unless I know the guy preparing personally. I have seen employees do things with food being prepared and I know they did worse when I wasn't watching. Not washing their hands, dropping food on the floor, using out-of-date stuff, and more.
If you like fountain drinks, never pull the cap off the mixing valve or open the ice maker on top. I had my ice maker cleaned every 3 months, some places never clean them until they break down.
But then again, restaurants aren't much better.

Last night I started to make a simple potato/leek soup. I couldn’t figure out what the hell to make with it, so it morphed. I cut the casing off of some chorizo and browned that to put in there and added a can of shoepeg corn. It was pretty damn good.

Last night I started to make a simple potato/leek soup. I couldn’t figure out what the hell to make with it, so it morphed. I cut the casing off of some chorizo and browned that to put in there and added a can of shoepeg corn. It was pretty damn good. I've made a version of potato soup a few times. It makes a lot, but I always make too much and share with the in-laws and neighbors, and we eat the leftovers cold the next day. 6-8 large potatoes depending on size. Cut into 1-2" cubes and leave skin on. Big stock pot....boil potatoes. Just enough water to cover potatoes Take a whole big white onion, a good bunch of leeks or green onions or spring onions, and a big wad of chives, a whole head of peeled garlic, and turn them to mush in a food processor or blender. Add everything to potato stock pot. One pound of bacon, from freezer. Remove bacon from package and cut/dice in as small of pieces as you can. Cutting frozen is much easier than thawed. Fry the whole pound in skillet until rendered and crispy. Add the whole skillet, grease and all to potato stock pot. Add a whole stick of butter to stock pot. Add a whole container of sour cream to stock pot. Add a cup of heavy cream to stock pot. Use a masher, wooden spoon, what ever to mash potatoes that have been boiled. I actually take the potatoes out and blend them, and return to stock pot, but this can be tedious and a pain. I lIke blending as it tends to incorporate the butter and cream into the potatoes, but it can be messy. Will need a big spoon if you go this route. Salt and pepper to taste. Serve hot, but cold the next day is fantastic as well.

Just a little Sunday brisket, butternut squash, baked beans, potato salad, and slaw. The new guy from Texas said it was the best meal he has eaten on a boat of any kind. Guess that's as good as it gets. Attachment Deleted

Redfish......bellys have honey, olive oil and Worcestershire and little sweat heat BBQ, fillet and figs.....yes, figs again!......honey, soy, salmon seasoning and olive oil. Once this has been on the grill a while, maybe 10 minutes before it comes off, a few shrimp we caught the other day will get rolled about in the hot juices of it all. Big Caesar Salad & Kalamata olives too! Neighbor is bringing some sort of fancy Bourbon.....which is such a waste on a lightweight....two sips to be polite and then nurse a beer for a hour to get the taste out of my mouth.
